Crop Update:

Harvest is slowing down a bit for HMC Farms peaches, plums, and nectarines.Table grape harvest continues with Krissy and Scarlet Royal red seedless table grapes, and Ivory and Great Green green seedless table grapes in harvest. Timco red seedless grapes will harvest soon, followed by Allison red seedless and Autumn King green seedless grape harvest beginning near the end of the month. The forecast shows a few more hot days, with a break in the heat over the weekend and into next week.

Caramelized Peaches Recipe

We love homemade ice cream! We actually love it so much that we occasionally make it at the HMC Farms office. Something about homemade vanilla ice cream on a hot day just makes everything better, but we like to elevate our ice cream just a bit with the topping we can’t live without: caramelized peaches.

This recipe is enough for about 14-16 bowls of ice cream.

What you’ll need:

  • 8 large HMC Farms peaches
  • 1 stick of unsalted butter
  • 2/3 cup of packed light brown sugar
  • Juice of 1 lemon
  • 1/2 tsp sea salt
  • 1/4 tsp ground cinnamon

Start by slicing or chopping your HMC Farms peaches, discarding the pits. Place the peaches in a bowl and mix in the fresh lemon juice, sea salt, and cinnamon.

Melt the butter and brown sugar in a skillet on medium heat. Once the butter has melted and combined with the sugar, add the peaches and increase to medium-high heat. Stir occasionally to prevent scorching.

When the juice from the peaches, butter, and sugar have reduced into a thicker consistency, remove the pan from heat and let it stand a little before serving.

Tips:

Depending on the size of your pan, you may need to split this into 2 different batches, the peaches should not be more than 2 pieces deep when putting them in the pan to cook.

Warm peaches are delicious, but if they are too hot they will melt the ice cream rapidly. Let the peaches stand a bit to cool before using them as topping for your ice cream.

Peaches straight from the pan are hot! When taste testing, let the peaches cool slightly to avoid burning your mouth.

If ice cream isn’t your thing, caramelized peaches can also be added to yogurt.

Vanilla Peach Smoothie Popsicle Recipe

Hot summer days call for frozen treats. HMC Farms peaches are in the peak of harvest in California’s Central Valley, so we try to include them in everything possible from baked goods to smoothies. One of our new favorite ways to use peaches is in peach smoothie pops, made with simple ingredients. These can be made using popsicle molds or popsicle bags.

What you’ll need for 8 pops:

  • 4 medium HMC Farms peaches
  • 2/3 cup vanilla Greek yogurt
  • Honey

3 steps to homemade peach smoothie pops:

  • Start by peeling the peaches and removing the pit.
    Tip: Many of our HMC Farms peaches are clingstone varieties. We’ve found that the easiest way to create pretty slices of fruit is to place the fruit on a cutting board with the stem side down and slice straight down on each side around the pit.
  • Add peaches, yogurt, and a drizzle of honey to a blender, and puree until smooth.
  • Scoop pureed mix into popsicle molds or bags and put in the freezer for at least 4 hours, until frozen solid.

Peach Salsa Recipe

There’s something wonderful about combining sweet and spicy foods. We love peach salsa because it is not only fantastic on chips, but as a topping for chicken, fish, and a number of other dishes. Our recipe for peach salsa can be made with HMC Farms yellow or white peaches, depending on your personal preference. This recipe is also great made with HMC Farms nectarines in place of peaches.

What you’ll need for 4 cups of salsa:

  • 3 medium HMC Farms peaches, chopped
  • ½ medium red onion, minced
  • ½ a large red bell pepper (or 1 mini red bell pepper), diced
  • 2-3 jalapeños, diced
  • Small bunch of cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper

Steps to peachy salsa goodness:

  • Start by chopping the peaches. Removing the peach skin is optional, but not necessary.
    Tip: Many of our HMC Farms peaches are clingstone varieties. We’ve found that the easiest way to create pretty slices of fruit is to place the fruit on a cutting board with the stem side down and slice straight down on each side around the pit.
  • Mince the red onion, dice the jalapeños and bell pepper, and chop the cilantro.
    Tip: For spicy salsa, use the whole jalapeño (minus the stem). For mild or medium salsa, remove the seeds and veins before dicing the jalapeños).
  • Combine all cut ingredients in a bowl. Add lime juice, salt and pepper. Stir gently and let sit, preferably for about an hour, in order to let the flavors combine.

Fruit and Cheese Board

Chances are, you’ve seen a perfectly styled cheese or charcuterie board on social media. While cheese, meat, and crackers can make any crowd pretty happy; we feel that no charcuterie is complete without our HMC Farms fruit.  The sweet flavors of our tree fruit and table grapes perfectly compliment the savory meat and cheese that are classic cheese board staples.

What you’ll need to copy our board:

  • 4-6 pieces of HMC Farms fruit
    • We used 2 plumcots, 2 nectarines, and a large peach
  • HMC Farms grapes
    • We used Bunchkins, which are perfect for this, but our other grapes work well also.
  • 3 kinds of cheese
    • We used 3 types of Vintage Cheese from nearby Bravo Farms: Dutch-Style Gouda, Chipotle Cheddar, and Classico (this one is a hard goat cheese) – we suggest using one cheese that crumbles well
  • 2 types of meat – salami, prosciutto, etc.
    • We used sliced peppered salami and dry salami nuggets
  • Crackers, crisps, or a sliced baguette
    • We used cranberry pumpkin seed crisps and mini Croccatini crackers
  • 1-2 kinds of nuts
    • We used raw almonds and cashews
  • Honey
    • We used chipotle honey from a local stand
  • Green garnish
    • We used oregano from our home garden, but rosemary is a beautiful accent.

The perfect board is a combination of beauty and taste. We started by placing our cheeses in three different spots around the board. We sliced the softer cheeses, and crumbled the hard cheese, while leaving it inside the rind for aesthetic purposes. Next, we sliced our HMC Farms peaches, nectarines, and plumcots, and placed them in three different spots on the board. We’ve found that the board looks best when the anchor items, in this case cheeses and fruit, are on different thirds of the board. Our jar of honey went right in the middle of the board.

Tip: A lot of our HMC peaches and nectarines are clingstone varieties. We’ve found that the easiest way to create pretty slices of fruit is to place the fruit on a cutting board with the stem side down and slice straight down on each side around the pit. These larger pieces can be sliced more easily that trying to separate each slice from the pit individually.

After placing the stone fruit, we added our Bunchkins Champagne grapes. These petite bunches of fun practically scream charcuterie board, and we are still in their narrow window of availability. Once the Bunchkins have completed harvest and are no longer available, try replacing them with our delicious HMC Farms California table grapes.

The open spaces remaining on the board were then filled in with the salami and crackers, followed by the nuts and garnish.

Tip: An easy way to make sliced salami look fancy is to fold it into quarters (in half once, and then in half again so that it is shaped like a slice of pizza) and then wedge it together with the rounded side up.

Honestly, we had to hold back the whole office to take photos of the board. It was promptly devoured as soon as we finished the photos. You can expect a similar reaction when serving a fruit and cheese board at your next BBQ, game night, or book club. People love these delightful mini buffets, and HMC Farms fruit will elevate your board to the next level.

Peach al pastor challenge at Tacos, Brews & Jams

Every month, Tioga Sequoia Brewing Company in downtown Fresno hosts Tacos, Brews & Jams – curated by journalist and local foodie Mike Oz. As the name suggests, the event is complete with food trucks, beer from the host brewery, and live music; plus several local vendors. The theme of this month’s TB&J was a peach al pastor challenge. Three local peach growers were paired up with three local food trucks to replace the traditional pineapple used in al pastor with something more representative of the Central Valley’s bounty: peaches. As a bonus, or perhaps the inspiration behind the theme, Tioga Sequoia brews Half Dome beer, which is made with local peaches. For this event, special Half Dome Beer Slushies were available for purchase – the perfect complement to tacos on a warm summer day.

HMC Farms was paired up with Gonzalez Taqueria from Fresno for the challenge, and the results were delicious! In addition to cooking the al pastor meat with peaches, Gonzalez Taqueria added slices of the cooked peaches to the tacos. Like icing on the cake, our peaches were also made into salsa to top the taco perfection cooked up by Luis Gonzalez. Our only complaint about the whole event is that we can’t eat those delicious tacos for dinner every day!
