Grape Pasta Salad

What’s not to love about pasta salad? It’s one of those dishes that can be a main or a side, and
you can put nearly anything your heart desires in it for a sweet or savory, light or filling meal.
With a plethora of pasta types available, pasta salad can be enjoyed by people who are on
gluten free, keto, or paleo diets and beyond. Occasionally, we reach out to our HMC family to
see if anyone has tried and true recipes to test in our farm kitchen. One of our team members
submitted her family’s bowtie chicken pasta with grapes, and it was an instant hit. The California
table grape season is a busy time around our office, and this is the perfect make-ahead lunch
that can be split among several people or stretched into lunch for a few different days.

Looking for a vegetarian option? Just swap the chicken for tofu, tempeh, or another protein and
enjoy the light and sweet flavor of this pasta salad without the meat. Go one step further and
replace the honey and buttermilk ranch with a vegan salad dressing of your choice, and you’ve
got a vegan approved version of this tasty summer dish.

Here’s what you’ll need:

  • 1 box bowtie pasta of your choice (around 6oz)
  • 2 cups red seedless grapes cut in half
  • 2 cups cooked and shredded or chopped chicken (can sub non-meat protein here)
  • ½ cup chopped red onion
  • 1 ½ cups buttermilk ranch dressing mix
  • ¼ cup honey
  • ½ teaspoon poppy seeds

Boil your pasta until al dente, and rinse with cold water to stop it from cooking further. Add the
grapes, chicken, and other ingredients to the pasta and mix it all together in a large bowl.
Refrigerate for an hour or more until chilled, and enjoy or divide up in containers to grab and go
